Vegan Red Thai Curry

I love anything and everything made of coconut milk. Red Thai curry is one of my favorite coconut milk curries what about you?



  1. Red Thai curry paste – 2 tablespoon
  2. Peanut putter – 1 tablespoon
  3. Honey – 1 tablespoon
  4. Coconut milk – 1 cup
  5. Soy sauce – 1 teaspoon
  6. Tofu
  7. Veggies – Spring onions, mushrooms, baby corn, carrots, french beans, capsicum, curry leaves
  8. Pepper – 2 teaspoon
  9. Salt as per taste



  1. In a pan heat 1 tablespoon oil
  2. Now add curry leaves and all the veggies, salt and pepper powder.
  3. Saute it for 5 seconds and add Thai curry paste, honey, peanut butter, soy sauce and coconut milk.
  4. Bring it to boil , now add tofu and basil leaves and turn off the gas.
  5. Adjust the spiciness by adding more Thai curry paste.

Enjoy it with Jasmine rice or any plain rice.
