Our last vacation was Thailand & I miss vegan thai curries and Jasmin rice soooooo much.
So tonight for dinner I’m going to make Red thai curry with rice.
So I have already prepared red thai paste…sharing with you all the recipe.

- Garlic cloves 10 to 12
- Ginger about 2 tablespoons
- Pepper, coriander, cumin dry roasted – 2 tablespoons
- Lemon juice – 2 lemons
- Fresh lemon grass
- Curry leaves
- Onions – 1 cup
- Kashmiri mirchi soaked in hot water for 30mins
Grind all the above ingredients to a fine paste and store it in freezer.
Add 2 tablespoons of this paste in your curries.
